@modman: I made the trees manually. But here is how to do it:
1. build up the tree trunk with some big branches.
2. create one twig for the tree. This is simply a plane with a texture on it. The plane is probably a bit curved.
The trick is to use a texture with a transparency background like this:

3. Now copy the twig several times and put it on the tree. While doing so , resize, rotate or mirror the copied twig a bit to make them look different.
Thats all....
Try it, its really easy. If you start with a simple ground plant, you don't even have to create a tree trunk. So start with this!
The secret are the good textures, thats why I'm currently put so much energy in creating texture fotos at burningwell.org ( all public domain, and completly free to use )

Glest has problems with the light on the twigs. If the twig is made with a single plane and its normal faces to the sun, it gets lighted. But the other side of the plane is also lighted. This looks a bit strange. In cases where you will see both sides in the game you better do something like this:
Before copying the twigs to the tree, copy the twig one time and place it below the original one (very near to it.) like this:
_______________________ plane 1
-------------------------------- plane 2
Now you give plane 1 a normal, showing to the top and plane 2 a normal showing to the bottom.
now this 2 plane thing is your twig you will copy. But this trick is only needed if you will see both sides of the twig in glest.
For example my pine trees didn't need it.
