Ahh... some one else discovered Ben Mathis!

That guy's videos are awesome, not really tutorials as such, but if you want to see a pro in action and you've got bandwidth to burn, his video series on 'Delilah' is outstanding... I think the playback is at 15 times real speed (or something like that).  Very educational, very good viewing, very highly recommended.
